You can't. The only "old" iOS you can install is iOS 7.1.2, and even then, it's not guaranteed you'll be able to tomorrow since Apple could stop signing that version at any moment, and you won't have another chance. iOS 8 is proving very unstable, even version 8.0.1. I recommend sticking with jailbroken 7.1.2 (using Pangu).
